Bread Making
A hands-on morning course covering the fundamentals of bread making, including how we make our daily porridge sourdough. You’ll learn key sourdough techniques — from maintaining a starter to shaping and baking — with plenty of time to get stuck in. You'll leave with your own freshly baked loaf and the skills to recreate it at home. The morning concludes with a relaxed farmhouse lunch in the Glebe kitchen.

Set within 15 acres of rural Devon, our farm-to-table restaurant is shaped by the land, the seasons and the craft of cooking.
Our kitchen garden shapes our menus daily, supplying vegetables, fruit and herbs grown to organic principles — without synthetic pesticides or chemical fertilisers. When the garden is abundant, we preserve the surplus through pickling, fermenting and drying to carry the flavours of each season through the year.
We rear our own Lop pigs and take a full nose-to-tail approach: bones for stock, skins in sausages, offal for pâtés and terrines. Our salumi — hams, sausages and more — is all made in-house.
Hugo is a chef and host whose roots run deep in rural hospitality. Inspired by Italy’s agriturismi—working farms where guests are welcomed like family—he brings that same spirit to the Cotswolds, combining a love of food, farming, and warm, relaxed hosting.
After training as a chef in London and learning traditional curing techniques in Tuscany, Hugo returned to the countryside to build something slower and more personal. His approach is rooted in seasonal, nose-to-tail cooking, with ingredients grown on site or sourced from nearby farms and producers.
Whether he’s leading a communal meal, firing up the outdoor oven, or sharing a quiet moment over a glass of wine, Hugo creates experiences that feel grounded, generous, and unmistakably Cotswolds.
